Walmart Price Match Recipe: Easy Blueberry Muffins

While our weekly price match recipes have focused mostly on entrees this week we shift gears to include this Walmart Price Match Recipe: Easy Blueberry Muffins in honor of the great deal found at Sprouts on fresh blueberries this week that you can price match at Walmart.  When berries go on sale at these low prices you want to take advantage and get as many as possible but not let them go to waste.  Make these muffins in large batches and you can wrap and freeze them for easy on the go snacks or breakfasts for up to 4 months.

EASY BLUEBERRY MUFFINS

INGREDIENTS

1  Cup All Purpose Flour

1/2 Cup Quick Oats

1/2 Cup Granulated Sugar

1/2 Cup Light Brown Sugar

2 Teaspoons Baking Powder

1/2 Teaspoon Salt

1/3 Cup Vegetable Oil

1 Large Egg

1/2 Cup Milk

2 Teaspoons Vanilla Extract

2 Tablespoons Lemon Juice

1 Cup Fresh Blueberries

Powdered Sugar to dust tops after baking

 

DIRECTIONS

Preheat oven to 350 degrees

Prespray muffin tins with nonstick cooking spray

Dust blueberries with flour (I use approximately 1 tablespoon flour for 1 pint blueberries, just a nice light coating). Set aside.

In large bowl mix together flour, oats, both sugars, baking powder and salt.

Mix in oil, eggs, milk, vanilla and lemon juice stirring gently until just moistened.

Gently fold in blueberries

Pour batter into muffin tins leaving them 3/4 of the way full.

Bake at 350 degrees for 15-17 minutes or until risen, golden brown on top and when toothpick in center comes out clean.
