Walmart Price Match Recipe: Easy Vegetarian Taco Cups
One of our favorite meals has always been tacos, and this weeks Walmart Price Match Recipe Easy Vegetarian Taco Cups is born of our love of Mexican food and needing something quick, easy and inexpensive at the last minute.  Not only are these healthier than our traditional tacos, they are fun to assemble, inexpensive and very satisfying.
This week we will be using the following ingredients from the Price Match Report:
Sargento Shredded Cheese $2.50 Price Matched To Albertsons
Bushs Best Pinto Beans $1.50 Price Matched To El Rancho DFW
Knorr Rice Sides (Spanish Rice) $.89 Price Matched To Tom Thumb
Walmart Price Match Recipe: Easy Vegetarian Taco Cups
- 6 Medium Flour Tortillas
- 2 Cups Prepared Spanish Rice (according to package directions)
- 2 Cups Pinto Beans
- 1 Teaspoon Garlic
- 1 Teaspoon Cumin
- 1 Cup Shredded Cheddar Cheese
- Lettuce, Tomato, Black Olive, Sour Cream & Cilantro as desired for garnish
- Spray muffin tin with nonstick spray
- Preheat oven to 375 degrees
- Slice each tortiall in half
- Place tortilla halves into indivicual muffin tins forming a shape similar to a cup
- Mix cumin & garlic powder into pinto beans
- Place 1 tablespoon beans in each tortilla cup.
- Top beans with 1 tablespoon cooked Spanish rice
- Sprinkle shredded cheese on top of rice
- Bake at 375 degrees for 12-15 minutes or until cheese is melted and tortillas are beginning to brown.
- Allow to cool for 5 minutes then remove from tin and serve with desired garnishes.
Garnish these Easy Vegetarian Taco Cups with your favorite taco toppings or serve as is. Make a double batch and freeze them for an even quicker grab and go lunch or dinner meal! Not only will this stretch your budget farther, but it will leave you the hero because your kids will love them. If you prefer to add meat to the cups, simply cook your ground beef, turkey or chicken and add as a layer on top of the rice and beans for an even heartier meal.
